1 ½ c. sugar
½ tsp salt
½ tsp cinnamon, divided
2 tsp baking powder
½ tsp nutmeg, divided
2/3 c. shortening
¼ c margarine or butter
½ c milk
2 c water
6 small apples peeled and cored
2 ¼ c flour
1/3 c sugar
For syrup combine: 1 ½ c sugar, ¼ tsp. cinnamon, 1/4 tsp
nutmeg and water. Bring to boil, reduce heat and simmer
for 5 minutes. Remove from heat, stir in margarine and set aside. Combine flour, baking powder and ½ tsp salt. Cut in shortening till it resembles course crumbs. Add milk all
at once; stir just till moistened. Form into ball. Roll to
18” x 12” rectangle on floured surface. Cut into 6- six inch squares. Place apple in center of each square; sprinkle with remaining 1/3 c sugar, ¼ tsp of each, cinnamon and nutmeg.
Dot with butter. Moisten edges of dough. Fold opposite
corners to center on top of apple. Pinch edges together.
Place in 13”x 9”x2” baking dish. Pour syrup over
dumplings. Bake at 375 degrees for 45 minutes or till
apples are tender and crust turns light golden brown. Serve warm or cold with cream or ice cream.
