¼ c milled flax seed (opt)
½ tsp salt
¾ c wheat graham flour
1 egg, beaten
¾ c unbleached flour
1 ½ c finely chopped apple
½ c sugar
3 Tbls vegetable oil
2 tsp baking powder
½ c milk
½ tsp soda
½ chopped nuts(opt)
Blend dry ingredients in a bowl. In a separate bowl combine egg,
vegetable oil, and milk. Add dry ingredients to egg mixture. Stir
just till blended. Fold in apples and nuts. Batter will be thick.
Fill well greased muffin tins 2/3 full. Bake at 350 for 18 minutes or till top springs back when touched. Yield 12 muffins
