1 cup sugar
1/2 cup flour or 1/4 cup cornstarch
1/4 tsp salt
3 cups milk
4 egg yolks, well beaten
3 Tbsp margarine
1 1/2 tsp vanilla
1 baked 9-inch pie shell
whipped cream
In a medium saucepan combine sugar, flour and salt. Gradually stir in milk. Cook over medium heat until mixture thickens. Mix egg yolks with 1 cup of hot mixture; add to mixture in saucepan. Bring to boil and cook 2 more minutes; stir constantly. Remove from heat and mix in vanilla and margarine. Pour into pie shell. Cool in refrigerator. Top with whipped cream.
Yield 1 pie
Variations: Banana cream Pie: slice 2 bananas into bottom of pie shells and top with hot filling. Cool in fridge. Top with whipped cream. Yield: 2 pies
Coconut Cream Pie: Add 1 cup flaked coconut to hot filling and pour into pie shells. Cool in fridge. Top with whipped cream. Yied 2 pies
